Soho houses many of London’s best restaurants and Chotto Matte is a pioneering restaurant located right in the heart of it.

Overseen by Executive Chef Jordan Sclare, the restaurant offers an innovative menu ensuring the finest quality of organic as well as sustainable produce.
Jordan continues to reinvigorate the global menus and push the boundaries of traditional Nikkei techniques, a fundamental figure in the development and progression of the restaurant.
Certainly, it’s a feast for the eyes and the palate, with dishes like Sea Bass Ceviche, Yellowtail Nikkei sashimi, and Octopus Tentáculos de Pulpo Octopus Yuzu and Purple Potato prepared in the theatrical open kitchen.
Nikkei Cuisine at Chotto Matte Restaurant
Since it opened as the first of London’s restaurants dedicated completely to Nikkei cuisine, it has become a must-visit for foodies – especially those seeking out some of the best restaurants in Soho.
Furthermore, Japanese sushi and sashimi and Peruvian ceviche represent two civilisations that value fresh seafood and seasonal ingredients.
Nikkei is an ancient fusion of Japanese and Peruvian ingredients and practices.
The essence of this cuisine has been captured by the incredible team at Chotto Matte by using the best of organic and no GMO ingredients. The restaurant is particularly passionate about championing a ‘no waste’ approach to their food production by managing the cutting process of each ingredient.
The chefs reutilise unused ingredients in innovative ways and include them in key dishes; a notable example is that the lean part of the salmon flesh is used in the rolls, while the fillet parts are used for sashimi.
What I particularly enjoyed about Chotto Matte was the array of dishes on offer. Tempura, sashimi, robata grill, sushi, dessert, and brunch are all on the extensive menu.
Among my favourites were Pollo den Miso, miso-marinated chicken with carrot, daikon, and yellow chilli yogurt, and Gambas a la Parrilla, Argentinian red shrimp with spicy coconut curry marinade and pickled daikon.
The bar menu is equally impressive, with a range of cocktails and award-winning Pisco Sours too. The cocktails are based on flavours from Lima and Tokyo, making them both unique and complementary to the menu.
Restaurant Decor – Chotto Matte Restaurant
Chotto Matte London is a 1960s modernist building designed by Andy Martin, who works on all Chotto Matte locations globally.
The two-story design has a cast glass wall panel, natural lava stone accents, and a Japanese-inspired graphic backdrop.
The venue, which contains a dining room, lounge, and bar, features spiral staircases.
Kurt Zdesar – CEO of NZR Restaurant group – opened the first Chotto Matte restaurant in 2013.
Australian-born Zdesar has worked as European Director for Nobu, helped build the original Hakkasan, and founded Ping Pong.
Chotto Matte expanded abroad after the Soho restaurant’s success, opening in Toronto and Miami.
The expansion plan continues to progress with Doha, Riyadh and San Francisco venues due to open in 2022.

From the moment we arrived at Chotto Matte, without a reservation, our experience was 5 star! The staff couldn’t be more welcoming, seating at the sushi counter we watched in action the Executive Head Sushi Chef, Keita Sato, prepared us mouth watering dishes.
