I started Nonna Tonda with my wife Rebecca after having done an apprenticeship at the Michelin starred restaurant L’Erba del Re in Modena where my passion for fresh pasta was sparked.

After this, I wanted to continue to learn about all the very best recipes so I decided a trip around Italy was needed!

Rebecca and I packed up the contents of our little flat into our car and set off with our six-month old baby, Freddie. We spent six weeks on the road eating as much pasta as we possibly could.

We bought ingredients from the local markets to recreate and adapt dishes somewhat chaotically in our Airbnb kitchens while Freddie slept. It was the most exciting trip and we couldn’t wait to start Nonna Tonda when we got back.

Italy’s pasta varies so much from region to region; the richer egg pastas from the more affluent north to the semolina pastas a little further south.

There are an endless array of dishes all coming from specific parts of the country and we are constantly on the look out for new recipes which we cannot wait to bring to you!
